Sometimes, it takes some frozen shrimp, nuts, and pre-washed greens to make a healthy, quick, and protein-packed dinner. This protein-packed salad is perfect for a delicious and easy dinner after a long day.

Protein-packed Ingredients for protein-packed dinner

  • 6 -8 cups of dark leafy greens, washed and dried
  • 1/2 cup cooked, medium-sized chilled shrimp (if frozen, boil and then chill in cold water )
  • 1/2 avocado, diced
  • 2 TBS cashew halves
  • One clementine, sectioned

Dressing

  • Drizzle of olive oil
  • Juice of 1/2 lemon
  • Salt and pepper to taste

Directions

Combine all salad ingredients, drizzle with olive oil and lemon juice, and top with salt and pepper.
