Protein-packed Ingredients for protein-packed dinner
- 6 -8 cups of dark leafy greens, washed and dried
- 1/2 cup cooked, medium-sized chilled shrimp (if frozen, boil and then chill in cold water )
- 1/2 avocado, diced
- 2 TBS cashew halves
- One clementine, sectioned
- Drizzle of olive oil
- Juice of 1/2 lemon
- Salt and pepper to taste
Combine all salad ingredients, drizzle with olive oil and lemon juice, and top with salt and pepper.
