Ingredients
  

  • 1 kg Chicken
  • 1 kg rice Soaked
  • 1 cup Yogurt
  • 1 cup oil
  • 1 tsp cumin seeds
  • 7 Green cardamon
  • 7 cloves
  • 3 cinnamon sticks
  • 3 Bay leave
  • 1 tsp Black Pepper
  • 1 tbsp red chilli powder
  • Salt to taste
  • 1 cup Mint leaves
  • 4 big onion sliced
  • 2 tbsp Ginger Garlic Paste
  • 2 tbsp lemon juice
  • 4 to 5 Green Chilli
  • 1 tsp orange food color
  • 1/4 cup milk

Method
 

  1. Marinate Chicken with yogurt, lemon juice, salt, red chilli powder, ginger garlic paste, 1/2 tsp cumin seeds and 1/2 tsp black pepper..
  2. In a deep pan heat the water with 1/2 cup mint leaves, 1/2 tsp cumin seeds, 1/2 tsp black pepper, salt, bay leaves and cinnamon sticks and cook the rice..
  3. Heat oil in other pan and fry onion till golden brown and remove them from oil..
  4. Now add in this oil marinated chicken and stir for 2 to 4 minutes and cover for 5 minutes..
  5. After 5 minutes fry chicken till cook ...
  6. Grease the deep pot with oil and put half rice then sprinkle mint leaves, fried onions and add chicken mixture then again make a layer with rice and sprinkle mint leave and fried onion..
  7. Add orange food color in milk and mix well then pour on top..
  8. Cover the pot and simmer it for 25 minutes on slow heat...
  9. Hyderabadi Biryani is ready to serve..
