8 oz. raw shrimp, peeled and deveined
1/3 cup cornmeal
1/2 teaspoon paprika
1 tablespoon coconut or canola oil
1/4 cup chopped bell pepper
1/2 teaspoon red pepper flakes
1/2 tablespoon agave or honey
1 teaspoon lime zest
the juice of 1/2 lime
1/4 cup chopped cilantro or scallions

- Pat the shrimp dry with a paper towel, and season with salt and pepper.Set aside.
- Place the cornmeal and paprika in a bowl, season with a pinch of salt and pepper, and stir until well-combined.
- Heat the oil in a large non-stick pot or pan over medium-high heat. While the oil comes to temperature, toss the shrimp in the cornmeal until they are evenly coated.
- Add the shrimp to the pot or pan and cook for 2-3 minutes on each side, or until golden. Add the bell pepper and red pepper flakes, and sauté together for 1-2 minutes.
- Remove the pan from heat, then add the agave, lime zest, and lime juice. Transfer the shrimp to a serving dish and garnish with cilantro or scallions (or both).
